Inside Europe, saffron is cultivated in several regions of Spain, Greece and Italy. In Spain, the regions which produce saffron are Castilla- La Mancha and Teruel. The Origin Denomination "Mancha saffron" is seated in Castilla- La Mancha. In Greece, saffron is concentrated in the region of Kozani where is located the Origin Denomination "Krokos Kozani". In Italy the saffron regions are Sardinia (with 35 ha), Abruzzo (7 ha) and in a lower measure Sicily, Tuscany and Ombrie (around 3 ha between the three regions).

In Italy 350 kg of saffron per year are obtained, 1.075 kg in Spain and 5.300 kg in Greece.
